Le Méridien Saigon has announced the appointment of Mr. Simone Murru as its new Executive Chef, responsible for leading the hotel’s kitchen team of all dining outlets, including Latest Recipe, Bamboo Chic, Latitude 10, Art Cacao and last but not least – the Banquet with Creative Meetings concept. Forward-looking culinary creations await all members and guests of the hotel with the arrival of this new Italian chef.

Chef Simone has 27 years dedicated to the culinary fields, starting from the regional Italian cuisine and expanding his gastronomy experience to European and international borders. The majority of those years were spent on deepening his knowledge in the fine dining sector, with the notably 13 years of his career devoting to Jet Hotel and Antica Zecca, a historical Michelin star restaurant in Italy and a must-visit dining place for national and international VIPs. Besides working in restaurants, Chef Simone also spent five years as chef instructor at Italian Culinary Institute for Foreigners, where he dedicated to training and fuelling the passion in the young chefs from around the world. With this special add-on to his profile, any kitchen team under his lead can expect not only a broadened knowledge of culinary fields but also a trained mind-set of delighting any diners with passion.

Chef Simone joined the Marriott family four years ago, at Sheraton Kuwait, The Luxury Collection hotel, contributing to its restaurant’s title as the best Italian dining spot in the city. Now as the Executive Sous Chef for The Luxury Collection & Four Points, he looks for a new challenge. “I’m excited to move on to a different country and work for a new brand, where I can share my skills and knowledge with a new culinary team, at the same time explore various aspects of the local dishes and dining culture. This brought me to Le Méridien Saigon”, shared the chef.

With the expertise in Mediterranean cuisine, Chef Simone yearns to explore more of the fascinating diversity of Asian gastronomies, after being captivated by the dining cultures of Japan, South Korea and the Middle East. He chose Vietnam as the next destination for his gastronomy journey, excited to create the dishes with new blends and twists, at the same time inspiring the teams at Le Méridien Saigon. Justin Malcolm, General Manager of the hotel shared: “We are looking forward to the refreshing touches Chef Simone will bring, from the selected injections of European delicacies into the rich flavours of Vietnamese dishes, to the combination of the creative gastronomies at Le Méridien Saigon.
