SCOPE OF RESPONSIBILITIES

Administration

o   Directs the daily operation of food & beverage sales, including the effective administration, supervision and execution of menus, food offer, display, staffing & programs consistent with the company standard & goals of providing excellent service while generating maximum revenue.

o   Directs the activities of food & beverage service personnel, including supervisor, beverage attendant, cook attendant to ensure the implementation of corporate policies & procedure within the F&B department.

o   Controls, measures & report sale performance on daily basis & takes required corrective action to ensure operations are in accordance with company standard & objectives.

o   Organizes and conducts market survey to keep abreast of the latest business trends, technology and competitor’s information to provide feedback to FBOM/DFB.

Financial and Revenue Responsibilities

o   Develop, recommend merchandise & promotion programs to maximize revenue & service objectives for established budget target Identifies market needs & trends then create concept & communicate these to FBOM/DFB for approval. Monitor product movement, special offer, plan & implement an effective sale & promotion activities in each month.

o   Achieve or exceed outlet revenue & cost objective for established budget target. Manages the outlet profit centre, assuming full responsibility for all revenue & expenses. Maximize profitability by increasing turn over covers to ensure that department’s operational budget is strictly adhered & that all cost is strictly controlled. Recommend measure to control or reduce cost.

o   Works closely with the F&B’s outlet to ensure the revenue budget & goals are achieved at all time.

o   Works closely with Stewarding to enforce proper control and reduce the breakages.
